Laverbread and Cockles

Cockles and Laverbread are a local delicacy in Gower and you can order them at a lot of the restaurants but can also be bought from butchers and a few shops in Swansea and Gower.

The cockles are removed from the sand when the beds are exposed at low tide. Traditionally this was performed by a donkey pulling a flat cart, using a curved metal 'scrape' to break the sand. In order to protect the industry and ensure sustainability, a government decree was passed in 1965 which only permits licensed gatherers to hand-pick the cockles with limited quotas, although these days the donkeys have been replaced by tractors. When cockles are bought they are often boiled and shelled. The spawning season is from January to April and they are harvested throughout the year.

Laver bread, properly speaking, is the finished product made with laver, the name of the seaweed itself, derived from the Latin laver, laveris and cognate with the Welsh 'lawr'.

It is native to the Gower rocks and is one of the major plant-based sources of vitamin B12, and has a high content of a number of dietary minerals, with concentrations of both iron and iodine particularly high. Some call it black butter. The seaweed is washed clean from the sand, and boiled for 10 hours. The weed is then shred small and well-kneaded, as they do dough for bread, and made up into great balls or rolls, which some eat raw, and others fry with oatmeal and butter. Traditionally, cockles and laverbread are eaten for breakfast with egg and bacon and in restaurants they sell it as a started with bacon and cheese as we Welsh say its Lush
